Understanding The Problem

Open Question: You would not know what the person is going to say
An example of this would be "What is your favourite colour?"

Closed Question: You would have some idea of what the person is going to say. It could only be between the options provided by you.
An example of this would be " What is your favourite colour?" Pink, Blue, Orange or Green?

Surveys are much easier than Interviews
This is because surveys can be used for a large number of people and Interviews can only be subjected to a couple of people because of the time restraint in which the person is in

Good surveys have a accomadation of closed and open question
Mostly closed questions and maybe just one open question for a open response
